In the heart of Muscat, where the sea breeze whispers tales of distant lands, Mandarin Oriental is hosting a culinary event that celebrates the essence of Mediterranean cuisine. From 17th to 19th July, the hotel’s signature restaurant, Essenza, will present a special Four Hands Dinner featuring Michelin-starred Chef José Barroso of Tasca by José Avillez, alongside Essenza’s own Head Chef, Davide Borin.

Two Chefs, One Vision

Chef Davide Borin, the soul behind Essenza, cooks with a quiet confidence born of years spent honing his craft across continents. His dishes speak of Northern Italy, refined, warm, and deeply personal. Opposite him stands Chef José Barroso, the Michelin-starred maestro from Tasca by José Avillez in Dubai. Barroso’s cuisine is a love letter to Portugal, generous, grounded, and steeped in memory.

Together, they have crafted a menu that doesn’t merely blend cuisines, it tells a story. A story of coastlines and kitchens, of tradition and innovation, of two culinary cultures meeting in Muscat for a fleeting, unforgettable moment.

A Menu That Travels

The evening begins with a trio of starters that feel like postcards from Lisbon and Venice: crispy Portuguese cod cakes, a playful Wagyu tartare cone, and the sweet-sour harmony of Sicilian caponata. Each bite is a conversation between the chefs, sometimes playful, sometimes nostalgic.

The second course deepens the dialogue: garlic prawns evoking the Portuguese coast, vitello tonnato with its creamy Northern Italian roots, and a truffle pizza that embodies Italian indulgence.

The conversation reaches a crescendo with Pasta Mista “Allo Scoglio”, a seafood medley featuring Omani lobster, mussels, and octopus. The Wagyu beef picanha, served with black beans and rice, is comfort food elevated, Barroso’s heartfelt nod to home.

Dessert is where the chefs allow their hearts to speak. Portugal’s beloved pastel de nata is served golden and warm, while Essenza’s signature tiramisu is finished tableside; a theatrical flourish that brings the evening to a delightful close.
