Thick Italian Hot Chocolate Recipe

Ingredients

  • 1 1/2 teaspoons cornstarch
  • 1/4 teaspoon kosher salt
  • 2 tablespoons confectioners’ sugar
  • 2 cups milk
  • 1/2 cup heavy cream
  • 6 ounces bittersweet chocolate, chopped
  • 2 tablespoons cocoa powder
  • 1 teaspoon vanilla extract
  • marshmallows, for topping

Method

  1. In a heavy-based saucepan, whisk together the cornstarch, salt and confectioners’ sugar.
  2. Gradually add the milk and cream, whisking continuously until the cornstarch has completely dissolved.
  3. Place the pan over medium-high heat and bring the mixture to a boil, whisking constantly to prevent sticking.
  4. As soon as it reaches a boil, reduce the heat to low and continue whisking for one minute until slightly thickened.
  5. Add the chopped chocolate and whisk until fully melted and smooth. Stir in the cocoa powder and vanilla extract until well combined.
  6. If the hot chocolate is thicker than desired, add a little extra milk until it reaches your preferred consistency.
  7. Pour into mugs, top with marshmallows, and serve immediately.
