The Silk Road delivered fragrant spice layered with bright citrus notes, creating an elegant introduction that awakened the palate without overpowering it. Alongside it, the Paloma offered a refreshing counterpoint, crisp, vibrant and perfectly balanced.

The first dishes immediately demonstrated why Hakkasan has earned its reputation. The Supreme Dim Sum Platter arrived with immaculate presentation, each dumpling showcasing delicate craftsmanship and beautifully balanced fillings. Every bite celebrated precision, proving that true luxury often lies in restraint rather than excess.

The Golden Fried Soft Shell Crab followed, perfectly crisp on the outside while remaining wonderfully tender within. A gentle warmth from the accompanying chilli elevated the sweetness of the crab without masking its natural flavour, resulting in one of the evening’s standout starters.

An unexpected highlight came in the Crispy Bean Curd and Mango Garden Salad. Fresh mango introduced bursts of sweetness against crisp vegetables and silky bean curd, creating a refreshing dish that provided a welcome contrast to the richer flavours that followed.

The seafood courses continued to impress. The Grilled Chilean Seabass in Honey was beautifully cooked, its buttery flesh lightly caramelised with just enough sweetness to enhance rather than dominate the fish. Rich yet remarkably delicate, it showcased the kitchen’s confidence in allowing exceptional ingredients to speak for themselves.

Equally memorable was the Wok-Seared Silver Cod in Calamansi King Soy Sauce. Flaky, succulent and deeply savoury, the cod absorbed the fragrant soy while the bright citrus notes of calamansi added freshness and balance. It was a dish that lingered long after the final bite.

To conclude the savoury courses, the Hakka noodles offered understated comfort elevated by flawless execution. Perfectly cooked with just the right amount of bite, they soaked up every layer of sauce and provided a deeply satisfying finish without unnecessary complexity.
