In Dubai’s ever-evolving wellness scene, where new concepts launch almost weekly, Keto Kartel, a Dubai-based boutique cafe, is proving that healthy living can be as much about joy as it is about nutrition.

The journey to Keto Kartel was anything but linear for founder Maria Galabova. With an academic background in politics and law and a career that included a four-year diplomatic tenure in Belgium, her professional roots were firmly planted in the public sector but a personal turning point occurred when she witnessed the profound physical and mental transformation in her husband after he adopted a keto lifestyle.

Her career was solidly grounded in the public sector. However, her perspective shifted dramatically when she saw how her husband transformed both physically and mentally after he started a keto lifestyle. This personal experience sparked a new interest in health and wellness for her.

Inspired by his newfound energy and her own upbringing in a family of medical professionals, Maria identified a gap in the market. She noticed that, more often than not, healthy options felt like a compromise, particularly when it came to sweets and bread. This realisation sparked a transition from politics to holistic entrepreneurship, guided by her belief in promoting longevity through lifestyle interventions.

What started as a personal passion for Maria slowly transformed into something much larger. Her friends and family began asking for her creations, and before she knew it, the demand was on the rise. It became clear to her that there was a genuine opportunity in the market. She saw a chance to create a brand that embraced wellness as a standard, rather than a limitation.

Keto Kartel officially launched in 2024 after years of recipe development, refinement and planning. From the outset, Maria was clear on one principle: flavour comes first. If something didn’t taste exceptional, it didn’t make the cut.

The technical challenge was significant. Removing sugar and gluten from pastries, breads and chocolates changes everything about structure and texture. Early attempts, as she admits, were sometimes “very tasty but very ugly.” Perfecting both flavour and presentation required bringing in experienced European pastry chefs whose training in technique and detail helped elevate the confections.

That European craftsmanship is now central to the brand’s identity. Every cake, chocolate and loaf is handcrafted in Dubai using premium ingredients. Keto Kartel’s display counters showcase creations such as Strawberry Fraisier, Pista Cube and The Sinner, along with bold flavour profiles like Red Dead Raspberry and Matcha Dust. The textures are carefully developed to mirror classic patisserie, while remaining 100 per cent sugar-free and gluten-free.

Bread, Maria says, has been one of the hardest categories to perfect. Achieving softness and structure without gluten demanded constant experimentation. However, it is the creative process of the job that she enjoys the most, especially product development. According to Maria, “there is something very fulfilling about taking an idea and turning it into something people can experience and enjoy.I also love seeing the emotional connection customers have with the brand. When someone tells me they can celebrate a birthday again, follow their lifestyle without feeling restricted, or simply enjoy food without guilt, that is incredibly meaningful. It reminds me why we started.”

Her background in diplomacy continues to inform how she runs the business. Strategic thinking, patience and long-term vision are part of her leadership style. Maria approaches growth with a steady hand, looking to expand Keto Kartel throughout the GCC and eventually into Europe
